Bubble Up Pizza Easy Way to Sneak in Some Veggies...

Bubble up pizza is a really easy recipe and the kids really love eating it.  I can sneak in some extra veggies in as well. When I have extra tomatos  veggies from the garden, I throw those in as well 


1 small onion, chopped
1 cup spagetti sauce (you can use chunky)
1/2 cup chopped mushrooms
1/2 cup chopped green pepper
3 oz turkey pepperoni
1 (16 oz) tube Pillsbury Grands Homestyle Reduced Fat® buttermilk biscuits
1 1/4 cup shredded part-skim mozzarella cheese


Preheat oven to 350 F.  In skillet, stir in pizza sauce over medium heat.  Stir in onion and any italian seasonings you like.  Add veggies (mushrooms, peppers, etc.) and pepperoni.  Add quartered biscuits; stir gently until biscuits are covered in sauce. 
Spoon mixture into a 9x13 baking pan coated with cooking spray.  Bake for 25 minutes.  Sprinkle with cheese, and bake an additional 10 minutes or until biscuits are done. 
Let stand 5 minutes before serving. 

Yummy kid friendly and fairly healthy!
