Cauliflower Your Kids Will Love (You, Too)

My wife has been making this recipe for years and it's a hit with both children and adults. It's simple to make and you can do a low cal version of the white sauce by using 2% milk if you want. While the idea of having hard boiled eggs in it might sound unusual (it is), the entire combination works marvelously. Whenever we serve this, the grand kids don't want to eat anything else on their plate.

I medium size cauliflower, prepared, or 16 oz frozen, cooked and drained.
6 hard boiled egss, sliced
1 C shredded cheddar cheese
2 C thick white sauce using 2 tsp salt in the sauce - (6 T butter, melted, add 1/2 C flour and blend well, SLOWLY add 2 C room temp. milk stirring constantly, cook over low heat until it thickens. The trick to white sauce is to add the milk slowly and stir the entire time.)
In a greased baking dish pour a layer of white sauce in the bottom. Place the cauliflower on top, cover with a little more sauce, sprinkle 1/2 of the cheese, arrange the sliced eggs on top, pour on the rest of the sauce, top with the remaining cheese.Cover and bake at 350 degrees around 30 minutes.

Hi Denise, If you're using fresh cauliflower, be sure you have trimmed and steamed it to your liking before adding it to the recipe. 30 minutes of baking will not cook it all the way through.

What does "prepared" mean? (medium size cauliflower, prepared, or 16 oz frozen...)
