Chicken Curry - Frugal Recipie Box
I found this recipe and thought it sounded wonderful for a nice fall day!! This is a great recipe to do when you have left over chicken! With only five "main" ingredients, this is a great time savor!!
1 large tart cooking apple, unpeeled, cored, and diced.
1 large onion, finely chopped
3 ribs celery, thinly sliced
1-2 TBSP. curry powder, according to your own taste.
1-2 TBSP. canola oil
1/2 tsp. salt
1/4 tsp. black pepper
2 cups chicken breast, cooked and diced
1-2 cups low-fat, low-sodium chicken broth
Saute apple, onion, celery, and curry powder in skillet in canola oil until tender and glazed.
Season with salt and pepper. Combine in slow cooker with chicken and chicken broth.
Cover. Cook on high for 30 minutes and then on low for 90 minutes.
Serve over a cooked brown rice. *Top with your choice of raisins, or pineapple tidbits.
