Creamy Chicken and Fingerling Potatoes
Here's a quick, easy recipe I made up last night: Use about one chicken breast and 4 to 5 fingerlings per person. Cut chicken breast into strips, season and brown on all sides. Meanwhile, cut fingerling potatoes (creamy and delicious little things) into chunks and microwave about 6 minutes. Whisk together one can of cream of mushroom soup, one can of chicken broth, a big dollup of sour cream, and whatever spices your family likes. I used soul seasoning, pepper, garlic powder and salt. When chicken is almost cooked through, add potatoes and soup mixture. Simmer for about 12 minutes, or until chicken and potatoes are cooked all the way thorugh.
