Delicious Pork Recipe

Costco had a great deal on boneless pork so we bought a good sized loin. The grandkids were here for the weekend and of course we wanted to serve them something tasty. Here is a fast and delicious recipe that should please everyone in the family. You want to use boneless pork sliced around a quarter inch thick. All you need to do is pound out the meat so it is thin, dip it into a beaten egg, then dredge it into seasoned breadcrumbs. We used Italian flavored and also added grated parmesan to the mixture. Heat maybe 2 -3 tablespoons of olive oil and around a tablespoon or so of butter in a pan, just enough of everything to cover the bottom of the pan. When the oil is hot and the butter has melted, fry the the cutlets approximately five minutes on each side, until golden brown. That's basically all you have to do. We served it with a marinara sauce on the side. For whatever reason, kids love to dip things. However, to make it even tastier, once you've finished cooking the pork, you can put it into a baking dish, top it with the marinara sauce and some mozzarella and broil it for around 15 minutes, just enough time to melt the cheese and heat the sauce. Delicious. By the way, you can also use chicken in this recipe, and if you add lemon juice to the egg mixture, it makes it even better. Easy, quick and delicious.
