Do You Know Spaghetti Squash?
I don't know why it took me until last year to find out about spaghetti squash. You just buy a nice looking squash, pierce it with a fork in 5 or 6 places, microwave about 10 minutes or so, until soft. Let it stand for a few minutes, then carefully cut in half (steam will escape and may burn you if not carefull) and discard the seeds. Take a fork and start to pull the strands of squash out into a bowl. They really look like strands of spaghetti. Pull them all out, mix with your favorite pasta sauce and plenty of your favorite pasta cheese, and enjoy. Almost all the flavor of pasta with none of the fat or calories. Honestly, it tastes like spaghetti! I serve it with turkey meatballs and salad for a complete meal. In fact, we're having it for lunch today!
