Easy Broccoli Recipe That Kids Will Love
I am always looking for ways to prepare vegetables that my grandkids will eat when they visit. I had recently eaten some broccoli nuggets at a friend's house and they were tasty and easy to make. In fact, your kids can help you.
All you need to do is thaw and drain a 12 or 16 oz bag. of chopped broccoli, then put it in the blender with 2 eggs and make a puree. Next, pour the puree into a bowl and mix in 8 oz.of grated cheddar cheese. Now, pour approximately half a cup of seasoned (I used Italian) bread crumbs on a cutting board and make a circle.
Base the amount you need on the amount of broccoli you used. Here come the kids. Pour the broccoli mixture on top of the bread crumbs and have them flatten it to around 1/2", making a pie. Pour another half cup or so of the bread crumbs on top, and press them down to make the top crust. Preheat the oven to 425 degrees.
In the meantime, using a pizza cutter, cut the pie into slices and place on a lightly greased baking sheet. They only need to bake 8 - 10 minutes. I'm thinking you can use any cheese, for instance, mozzarella, or parmesan to make it more like pizza.
Regardless, they should taste great. My grandkids devoured them.
