Easy Mexican Lasagna with Tortillas

I was reminded of an easy Mexican Lasagna  recipe this week as I brought it over to a neighbor who just had a baby this past week!  This is a good recipe for potlucks.  It is simply to make and fairly healthy if you use whole wheat tortillas.    

  • 2 cups diced chicken (great way to use leftover chicken)
  • 2 tablespoons chili powder
  • 1   onion, chopped
  • 1 (15-ounce) can black beans, drained
  • 1 cup salsa
  • ½ cup  diced green peppers  
  • 1 can of diced tomatoes  (you can use fresh too and I usually do in the summer months)
  • 1 cup frozen corn kernels or I can of
  • Salt
  • 8 (8 inch) tortillas,
  • 2  cups shredded Cheddar (your can use less cheese if needed)

Place two tortillas on the bottom of a 9x13 pan and then simply add layer the ingredients on just like regular lasagna..  I do find if I am using less cheese I will only do it on the bottom tortillas and then on the top.  Bake for 30 minutes at 350 or until you see the cheese all melted. You can easily make this vegetarian by eliminating the diced chicken. One full pan makes a good dinner for my family of 5 and then I can do leftovers for my lunch either one or two days!
