Excellent Potato Onion Cheese Dumplings

Costco recently had a fanastic buy on potatoes so we will be eating a lot of them in various forms over the next few weeks. This recipe is very versatile in that you can adjust it to use practically any cheese you have on hand. It's very simple to make and the results are wonderful. For the first batch my wife used munster cheese which tasted great. Those we ate as a side dish. But in the most
recent preparation she used gruyere. Amazing! We brought them as an appetizer to our book group and everyone loved them.

3 medium potatoes
1 medium onion - chopped
2 Tbl butter
4 oz Gruyere - cut into small cubes
Package of wontons
Cooking oil
Sour cream

While the potatoes are boiling, saute the onion in the butter until golden
Mash the potatoes, then add them to the onion mixture along with the gruyere
Mix everything over a low heat until the cheese has melted
Place one rounded teaspoon in the center of each wonton, and fold in half, pinching ends together
Heat 1/2 inch of oil over semi-high heat
When it's hot, fry several of the wontons at a time, turning them as they brown and slightly flattening each side as you turn them - each side only takes around a minute or so
Drain on paper towel
Serve hot or cold with sour cream as a side
