Get Kids to Eat Butternut Squash Squares

Want to get your kids off the French fries and onto another vegetable? Do this by working potassium rich veggies, abundant during the fall months, into their diets. Carve up a butternut squash for tasty squares loaded with Vitamins C and A. Not only are squash cubes healthy, but they are yummy alongside chicken fingers, macaroni and cheese and soup.

Prepare Baked Butternut Squash Squares
  • Preheat oven to 400 degrees F
  • Cut off the ends of the squash and then half it lengthwise
  • Remove the seeds and fibers in the hollow of the squash
  • Peel or cut off the hard outside shell (you can use a paring knife to remove the skin)
  • Cut the squash into long strips and then dice into 2 inch squares. 

    Next, arrange the squares onto a baking sheet and drizzle with olive or canola oil, 2 tablespoons of melted butter, a dash of black pepper and a half teaspoon of cinnamon. Then, mix the butternut squash by hand to evenly distribute the spices and the oil. Bake 40 minutes in the preheated oven, turning once. If your kids like to eat crispy foods, bake the squash a bit longer to achieve a harder texture.

    To serve, sprinkle them with a dash of kosher salt and plate with your kid's favorite foods.

I love butternut squash. Occasionally I will dice up a squash into cubes and then boil them until soft. Then I mash them up with a little butter and brown sugar and it's a side dish that gets raves every time.
