Italian Style Grilled Cheese: A New Twist on a...

Spice up your ho-hum grilled cheese by adding a little taste of Italy. Instead of American cheese, combine provolone, mozzarella and even parmesan on the sandwich.  

Ingredients:
Pancetta
Shredded provolone cheese
Shredded mozzarella cheese
2 pieces of sliced Italian bread (or similar)
Extra virgin olive oil
Butter
Oregano 

Cube a few slices of pancetta and fry until crisp; set aside (Pancetta is Italian bacon.) Drizzle two slices of Italian bread with extra virgin olive oil. 
Grill the sandwiches in a hot skillet with a tablespoon of butter:
First, place one piece of bread in the skillet. Then, add a handful of provolone and sprinkle with bits of the pancetta. Next, add a handful of the mozzarella cheese, and a dash of oregano. Place the second piece of bread on top and grill like you would a regular cheese sandwich. 

Optional ingredients:
Roasted red peppers
Thinly sliced tomato
Parmesan cheese
Garlic
To serve as an appetizer:
cut sandwiches in small squares and arrange on a platter.
