Leftovers - Easy Potato Soup

Craving Potato Soup?  Start with leftover or store-bought mashed potatoes.  Whisk potatoes into warm chicken broth until thickened and smotth.  Stir in chopped green onions and top with diced red peppers or bacon.  Yum!

I also like to keep leftover hearty bread slices in the freezer (Italian or artisan breads that only last a day or so).  Simply throw a piece in the toaster and it makes a terrific dipping side to soups like this.  You could also place a few slices on a baking sheet and drizzle with olive oil - bake at 375 degrees for 15 minutes and you've got a nice base for cheese, fruit, herbs, or preserves.

Aslo a fast, heart and "tasty" soup: you will need: skinless klobasa ( link sauage) peeled shrimp is ( optional) onion or minced onion 1/3 to 2/3 cup of instant rice about a half to 2/3 cup frozen chooped spinach 2 cans og chicken broth 1 can of MILD rotel * slice sauage, place small amount of non stick or sutter in qt. pot. Add minced or chopped onion. Brown. Add 2 cans of chicken broth. 1 can of mild rotel. Rice and spinach. COVER and allow to simmer. ( add shrimp only if you would like) WHA-LA ----a 10 to 15 minute meal. trisha hodges ennis, texas
