Muffin Pan Meatloaf

Here's a quick and easy way to prepare meatloaf that my grandkids love. They can help prepare it and since the meatloaf is cooked in separate portions in a muffin pan, it takes a lot less time to bake. This is a basic recipe that we use, and you can certainly modify it to fit your taste.

1 1/2 lbs. lean ground beef
1/2 c favorite barbeque sauce
1/4 c milk
1 egg
1 c seasoned bread crumbs or cracker meal
1 small chopped onion

In a large bowl combine all the ingredients except for 1/4 c barbeque sauce. Mix well. Your kids can help you here, mixing it with their hands. Brush a 12 muffin tin with vegetable oil. Spoon 1/2 c mixture into each tin. Bake 25 - 30 minutes at 400 degrees, then top each mini-loaf with the remaining barbeque sauce and bake just another 10 minutes.

Another suggestion is instead of the barbeque sauce, use chunky salsa and 1 T. taco seasoning, and top the meatloaf with shredded taco blend cheese for the last 10 minutes.
You might want to place an aluminum lined foil pan under the muffin tins to catch any drips.

Could be an invention! muffin pans that are supported above a "drip catch" pan -- much like a broiler pan I suppose!

I love muffin pan meatloaf! Although I do wish they would make muffin pans with the holes in the bottom so the grease could drain out.
