Orzo and Chick Peas with Veggies
I saw Rachel Ray make this Orzo and Chick Peas with Veggies on 30 Minute Meals, and it looked wonderful. She used it as a side dish, but she said it can be used as a main dish too. Just dress some bibb lettuce with olive oil and lemon juice and pile the salad on top. Serve with some nice crusty bread. Or use as a side dish, as she did with Mediterranean Fish Tacos. Either way, it's simple, quick and delicious.
