These empanadas are easy and a BIG hit at any party! What you need to buy...
* 2 Pillsbury roll out pie crusts, 1 cooked chicken, frozen corn, salsa
What you need to do...
Flip over a wide glass and cut out circles out of pie crust (you can do this the day before or have the family help you). Take chicken off bone, shredding into small pieces and placing into a bowl. Add salsa and corn. Using your hands, place a small amount of filling in the middle of the round crust. Fold in half, pressing sides with a fork or your fingers. Cook until golden brown at 375 degrees. **The trick is to place a small amount of filling in the crust! You'll most likely have extra filling. You can place some tortilla chips on a cookie sheet, put filling on top and top that with some cheese- then heat in oven!
It test really good.
Try them deep fried. A little more work but wonderful.
There is always extra filling, so I keep that for tacos the next day!
I made something very similar with ground beef and taco seasoning and cheese. Will add this too!
