Quick Healthy Coleslaw

This is a really easy recipe for coleslaw that is sure to please.  And it's healthy too!  I made mine tonight along with BBQ'd chicken,  BBQ'd peaches & couscous and it was a big hit!  What I love is that you can taste all the coleslaw ingredients and it's so fresh and not heavy at all.

  • 1 medium cucumber
  • 1 (12-ounce) bag broccoli coleslaw
  • 3/4 cup nonfat or lowfat plain yogurt
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar

Grate cucumber into a large bowl. Add broccoli slaw and mint. Toss to combine and set aside.
In a small bowl, whisk together yogurt, honey, and apple cider vinegar. Pour over slaw. Toss to mix thoroughly.

For best result you can prepare this dish and let it sit for 20 minutes or more so the flavors permeate.  But it's great right away too.  Enjoy!


BBQ's peaches are simply taking some canned peach halves, rinse them quickly in cold water, and then throw them on the grill.  Only takes about 3 minutes a side and the delicious peach flavor carmelizes just enough for a lovely little garnish.

One of my favorite BBQ sauces is Trader Joe's Kansas City BBQ sauce.  This comes out great even in the winter when I can't get to the grill - just use a grill pan on the stove or even a hot skillet.

BBQ peaches are really simple. Just take some canned peaches (halved) and drain them. (You can rinse them in water if you want). Toss them on a hot grill for about 3 minutes per side and they carmelize just enought to make a really delicious garnish.
