If anyone out there needs a tasty dish for a party, not just the Super Bowl, allthough this version does seem to really appeal to the men, then this recipe should be perfect. It's easy, fast, hardy and delicious. Here's what you need.
1 1/2 pounds ground chuck
16 oz can refried beans
1 pkg taco seasoning
4 c shredded taco mix cheese such as cheddar, monterey jack blend
8 oz sour cream
1 c guacamole
1 c chunky salsa (your choice of spicy)
small can of sliced black olives
2 small, or 1 medium chopped tomato
1 bunch chopped scallions
Brown the ground beef with 1/2 the taco seasoning package. Drain the fat.
Spread the beans into a 9 x 13 serving dish, and cover with two cups of the shredded cheese. Place the beef on top of the cheese. Mix the rest of the taco seasoning into the sour cream and make that your next layer. Top that with the guacamole, pour the salsa on next and spread it around evenly. Top that with the remaining cheese, then the black olives, tomatoes and top it with the chopped scallions.
You can serve this dish immediately or let it sit over night. I think it tastes better at room temperature. Bring along a bag of hearty tortilla chips or Fritos and dig in.
