Easy Quick Recipe for Leftover Pork Roast

I made up this recipe the other night and it was a big hit. I had leftover pork roast, so I cubed it and browned the cubes in a drop of olive oil. Meanwhile, I made whole wheat bowtie pasta.

Once the meat was browned, I added a can of cream of mushroom soup, a can of milk and about 4 tablespoons sour cream. (I used skim milk and fat free sour cream and it was fine.).

Stir the sauce and meat and let simmer for 10 minutes. Drain the pasta and mix with the meat and sauce. Serve immediately.

YUM! It was a hit with all ages.

Ingredients:

Leftover Pork Roast (sliced or cubed)

Olive Oil

1 can cream of mushroom soup

1 can of milk

4 tbsp sour cream

Bowtie Pasta
