Here is my recipe for vegetable soup and my kids love it. I use my slow cooker for this.
One large container of any brand vegetable stock (I prefer Emeril Lagassi), one can of condensed tomato soup, chopped fresh parsley, celery, onions, green peppers red peppers, yellow peppers, green and yellow zucchinni, alphabet pasta, salt, pepper, Mrs. Dash Italian seasoning.
Add vegetable stock, tomato soup, parsley, celery, onions, salt, pepper, Mrs, Dash to slow cooker - I do not measure out the seasoning so add it based on how much you think your family would like. Place on low for 2 hours so the veggies and stock can cook together to blend the flavors. After that is done, add in the zucchinni and peppers for another 30 mins on low and once that is done for 5 mins add in the pasta but cook on high. Add in more Mrs. Dash Italian seasoning then serve with warm bread rolls then let kids add crutons, goldfish or oyster crackers in the soup to customize it.
Kids get their dose of veggies and it is a great dinner to serve on those cold nights.
